Healthy Recipe: Peanut Butter Energy Balls

This Meatless Monday, we’re bringing you a delicious (and easy!) recipe. Health Coach, Tianna, loves these Peanut Butter Energy Balls because…

“They’re quick, easy and satisfying! You can make them ahead of time for a quick grab-and-go snack . Filled with protein and fiber, they are sure to keep you full while also satisfying that sweet craving.

And they are versatile! You can eliminate, substitute, or add any ingredient. If you want less sweetness, reduce or eliminate honey and/or chocolate chips. Consider adding chia or flax seeds for more protein, fiber, and healthy fats!”

Ingredients:  

  • 2 cups rolled oats  

  • 1 cup natural peanut butter or other nut butter  

  • ½ cup honey  

  • ¼ cup mini chocolate chips  

  • ¼ cup unsweetened shredded coconut  

Directions:

  1. Combine oats, peanut butter (or other nut butter), honey, chocolate chips and coconut in a medium bowl; stir well.

  2. Using a 1-tablespoon measure, roll the mixture into balls. 

Note: If having trouble forming into balls, place mixed ingredients in the refrigerator for 15-30 minutes prior to rolling. 

You can store these in an airtight container for up to 5 days in the refrigerator or up to 3 months in the freezer.
