Healthy Recipe: Japanese Detox Soup
Our latest healthy recipe is a favorite from Health Coach Heather. She says, “I like to make this quick and easy soup when I feel like I need to hit the ‘reset button’ on my nutrition. Plus it’s a great way to get several servings of vegetables into your day!”

Japanese Detox Soup
Serves 4
Ingredients
5 medium sized Japanese Yams with peel (or sweet potato of choice)
1 large onion
4 celery stalks
4 carrots
4 cloves of garlic, minced
1 can (14oz) diced tomatoes or tomato sauce
1/2 bunch parsley
1/2 small cabbage head
8 cups vegetable broth (2- 32oz boxes)
Salt/pepper to taste
Steps
1. Wash vegetables and chop into bite-sized pieces.
2. Add vegetables and broth to a stock pot.
3. Cover and cook on medium/high heat for 30 minutes, stirring periodically until tender. Season with salt and pepper.
