Healthy Recipe: White Chicken Chili
With cold temps hitting most of the U.S. this week, it’s the perfect time to whip up a pot of something warm and filling! This White Chicken Chili is a hearty, delicious, and nutritious twist on the classic chili. Packed with protein and fiber (and loaded with flavor!) it’s the perfect meal for a cozy night in or a gathering with friends.

White Chicken Chili (serves 4)
Ingredients
1 TBSP olive oil
1 large onion, chopped
3 garlic cloves, minced
1 tsp ground cumin
1 tsp chili powder
½ tsp dried thyme
½ tsp dried oregano
½ tsp kosher salt
½ tsp black pepper
2 15- ounce cans white beans, rinsed and drained
1-cup reduced-sodium chicken broth
1 pound chicken breast, cut into 1-inch pieces
¼ cup chopped cilantro, optional
1 lime, quartered
Instructions
1. In a large saucepan, warm olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, chili powder, thyme, oregano, salt and pepper and cook, stirring for 30 seconds.
2. Add the chicken and cook for 5 minutes until it is no longer pink. Add the beans and broth and bring to a simmer for 15 minutes.
3. Serve with cilantro and lime juice if desired.
