Strawberry Avocado Kale Salad
Ingredients
· 2 bunches kale (any variety)
· 1 avocado, (divided) diced
· 2 tablespoons lime juice
· 1 tablespoon pure maple syrup
· 8 ounces fresh strawberries, sliced
· ½ cup walnuts (halves & pieces)
· Pinch of salt
Directions
1. Wash the kale and remove tough center ribs. Pat Dry leaves with kitchen or paper towel.
2. Tear or chop kale into bite-sized pieces and place in large bowl.
3. Use your hands to massage the kale with half the diced avocado and a pinch of salt, until kale is tender and has reduced in size.
4. Add the lime juice and maple syrup and toss well to coat.
5. Top the kale salad with the remaining avocado, strawberries, and walnuts.
6. Enjoy immediately or refrigerate until ready to serve.
(Note: leftover salad with last in the refrigerator for a few days.)
