Root Vegetable Latkes

We love to celebrate, and there is no better feeling than feasting on your holiday favorites that are better for you! It’s a win-win!

Here is a recipe to try out this holiday season! Happy Hannukah 😊

Ingredients

·        3 parsnips

·        2 russet potatoes

·        2 beets

·        2 onions

·        2 carrots

·        2 eggs (beaten)

·        1.5 c flour

·        1 c sour cream or Greek yogurt

·        1 tsp baking powder

·        1 tsp thyme

·        Oil for frying

·        Salt and pepper to taste

Instructions

1.      Peel potatoes and pulse in a food processor until shredded.

2.      Add shredded potatoes to a large bowl and repeat the same process with the other vegetables.

3.      Mix shredded veggies with your hands to make sure everything is distributed evenly.

4.      Add flour, baking powder, thyme and eggs and mix.

5.      Salt and pepper to taste.

6.      Line a plate or baking sheet with paper towels.

7.      Add ½ inch oil to large pan and heat over medium-high heat.

8.      Add ¼ c of veggie mixture carefully into oil and fry until golden brown. Transfer to paper lined plate to soak up any extra oil.

9.      Serve with sour cream or Greek yogurt! Enjoy!
