Healthy Mini Pies!

Ingredients
Crust
2 c almond flour
2 tbsp honey
2 tbsp melted coconut oil
1 egg
1 tsp baking powder
1 tsp cinnamon
½ tsp salt
Filling
2 apples diced very small
2 tbsp brown sugar
1 tbsp butter or coconut oil
1 tsp pumpkin pie spice
Ingredients
Preheat oven to 325 and grease mini muffin tin
In a large bowl, mix flour, baking powder, salt and cinnamon.
In separate bowl, combine egg, honey and oil.
Add wet ingredients to dry and mix until fully combined.
Rest dough for 5 minutes.
Distribute dough into muffin tin. 1-2 tbsp into each tin and create dent in the middle.
Bake for 10-12 minutes.
Cool completely
In saucepan, melt butter, then add apples, sugar and spice.
Cook down until apples are softened.
Add filling to pie crusts
