Grilled Peach & Corn Salad
Ingredients:
Fresh sweet corn (grilled)
Fresh peaches cut in quarters (grilled)
1 red pepper diced
1 small cucumber diced
Radishes diced
2 tablespoons of fresh mint
2 tablespoons of olive oil
1 tablespoon of apple cider vinegar
1 tablespoon of balsamic vinegar
4 cups of baby arugula
Optional: feta or goat cheese, and almonds
Directions:
Remove corn husks and scrub and rinse before cutting kernels off the cob
Combine peaches, corn, mint, radishes, red pepper, cucumber, oil, and vinegar and lay over arugula
