Avocado Egg Salad
Fat is important for our heath-it helps us absorb vitamins A, E, D, and K. Healthy fats include polyunsaturated and monounsaturated fats. Avocados are a great source of healthy fat! Switch up the mayonnaise for avocado in this healthy Avocado Egg Salad!
Ingredients:
4 hard-boiled eggs, cooled & peeled
½ avocado
1 teaspoon Dijon mustard
½ small lime or lemon, juiced
Salt and pepper to taste
Crackers, whole grain bread, or lettuce for serving
Directions:
Combine hard boiled eggs, avocado, mustard, and lemon juice in a bowl.
Mash with the back of a fork until fully combined.
Salt and pepper to taste.
Serve on a bed of spinach, toasted whole grain bread, or with crackers! Best enjoyed the day of making for freshness.
