Healthy Recipe: Balanced Italian Salad

Annice loves this salad because “it contains healthy fats and proteins, as well as plenty of fiber, to keep you full until your next meal.”

Ingredients 

  • 1 can Chickpeas cooked in a saucepan with tomato paste and red pepper flakes 

  • 1 can tomato paste  

  • ½ tsp red pepper flakes 

  • Kalamata olives, sliced 

  • Cherry tomatoes, sliced 

  • Cucumber, sliced 

  • Scallion, sliced 

  • Cabbage, finely chopped 

  • Hummus 

  • Avocado, diced or sliced 

  • Add salt and pepper to taste 

  • Top with lemon juice, olive oil and your choice of protein 

 Directions 

  1. Warm chickpeas in a saucepan with tomato paste and red pepper flakes. 

  2. Add all ingredients to your favorite salad bowl, mix, and enjoy!
