Healthy Recipe: White Chicken Chili

With cold temps hitting most of the U.S. this week, it’s the perfect time to whip up a pot of something warm and filling! This White Chicken Chili is a hearty, delicious, and nutritious twist on the classic chili. Packed with protein and fiber (and loaded with flavor!) it’s the perfect meal for a cozy night in or a gathering with friends.

For an extra boost of nutrition, add in more chopped vegetables like carrots or peppers. These will boost the color and texture of the meal.

Finish the chili by garnishing with a squeeze of lime juice, a dollop of Greek yogurt or sour cream and chopped cilantro. Enjoy!

White Chicken Chili (serves 4) 

Ingredients 

  • 1 TBSP olive oil 

  • 1 large onion, chopped 

  • 3 garlic cloves, minced 

  • 1 tsp ground cumin 

  • 1 tsp chili powder 

  • ½ tsp dried thyme 

  • ½ tsp dried oregano 

  • ½ tsp kosher salt 

  • ½ tsp black pepper 

  • 2 15- ounce cans white beans, rinsed and drained 

  • 1-cup reduced-sodium chicken broth 

  • 1 pound chicken breast, cut into 1-inch pieces 

  • ¼ cup chopped cilantro, optional 

  • 1 lime, quartered 

Instructions

1. In a large saucepan, warm olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, chili powder, thyme, oregano, salt and pepper and cook, stirring for 30 seconds.  
2. Add the chicken and cook for 5 minutes until it is no longer pink. Add the beans and broth and bring to a simmer for 15 minutes. 
3. Serve with cilantro and lime juice if desired.
