Apple Muffins!

When we saw this recipe there was a resounding “um YUM!” that echoed throughout the room. These tasty, healthy and #FallFun muffins are the perfect breakfast or snack to get you through the day!

Ingredients:

·        1 c grated apple (we used granny smith)

·        1 c cubed apple (smaller cubes work best)

·        1 ¾ c whole wheat flour

·        ⅓ c melted coconut oil

·        ½ c maple syrup

·        ½ c plain Greek yogurt

·        ½ c applesauce

·        2 eggs

·        1 tbsp raw sugar

·        1 ½ tsp baking powder

·        1 tsp ground cinnamon

·        1 tsp vanilla extract

·        ½ tsp baking soda

·        ½ tsp salt

Instructions

1.      Preheat oven to 425°F.

2.      In large bowl mix flour, baking soda, baking powder, cinnamon, and salt. Add in grated and cubed apples and stir.

3.      In a separate bowl, mix syrup and oil. Add eggs and combine well with a whisk. Add the yogurt, applesauce and vanilla and stir to combine.

4.      Mix wet and dry ingredient and separate batter evenly into a 12 muffin tin. Top batter with raw sugar.

5.      Bake for 13-16 minutes.

6.      Allow muffins to cool completely on a cooling rack and serve!
