Spicy Thai Noodle Soup

It’s National Noodle Month, and instead of your run-of-the-mill Chicken Noodle Soup(no hate, we love the classics) we thought we would kick it up a notch with this spicy dish! AND it’s vegan and vegetarian?! I mean… how could you not try it?

Ingredients

·        2 tbsp Coconut Oil

·        2 tbsp Red Curry Paste

·        2 cloves Garlic

·        I tbsp Grated Ginger

·        1 (14 oz) can of Coconut Milk

·        1 Cup Water

·        4 cups Veggie Stock

·        8 oz Rice Noodles

·        Lime Juice

Recipe

1.      Saute ginger, curry paste, garlic in coconut oil until fragrant.

2.      Mix in coconut milk, broth, water and bring to a rapid boil.

3.      Add the noodles directly to the boiling mixture and cook until tender.

4.      Garnish with lime juice, cilantro, or crushed peanuts!

5.      Eat!
