Avocado Egg Salad

Fat is important for our heath-it helps us absorb vitamins A, E, D, and K. Healthy fats include polyunsaturated and monounsaturated fats. Avocados are a great source of healthy fat! Switch up the mayonnaise for avocado in this healthy Avocado Egg Salad!

Ingredients:

  • 4 hard-boiled eggs, cooled & peeled

  • ½ avocado

  • 1 teaspoon Dijon mustard

  • ½ small lime or lemon, juiced

  • Salt and pepper to taste

  • Crackers, whole grain bread, or lettuce for serving

Directions:

  1. Combine hard boiled eggs, avocado, mustard, and lemon juice in a bowl.

  2. Mash with the back of a fork until fully combined.

  3. Salt and pepper to taste.

  4. Serve on a bed of spinach, toasted whole grain bread, or with crackers! Best enjoyed the day of making for freshness.
